Great-granny Alice's Maryland Crab Cakes
Ingredients
- 1 pound Maryland-caught blue crab meat (steamed)
- 1 egg
- 1 tsp mustard
- 2 dashes Worcestershire sauce
- 2 dashes hot sauce
- 1 tbsp parsley
- 1 tbsp OLD BAY®, or less
- 2 tbsp (heaping) mayonnaise, or more
- 1 tsp baking powder
- ¼ tsp black pepper
- 1 tsp salt
- ¼ cup instant mashed potatoes, or more
Directions
Mix all ingredients except crab meat and instant potatoes. Add crab meat and fold into mixture. Add instant mashed potatoes a little at a time until the crab cakes are not runny, but not too dry. Refrigerate for at least 2 hours, or as long as overnight.
Bake at 350° for 5 minutes, then broil until tops are brown. Serve immediately.
